Polly is one of Melbourne’s first cocktail bars, opening on Brunswick Street in the heart of Fitzroy over 18 years ago. Today, Polly’s menu boasts an expansive range of cocktails, customers are encouraged to challenge the bartenders to create new classics or re-invigorate old favourites – no request is too hard.
