A lively Carlton bistro and veritable institution, you'll find Paris Go constantly full with couples and celebrating families enjoying the flavours of France in style. Housed in an elegant Victorian terrace, this charming bistro is the perfect place to get acquainted with the classics of French cuisine, paired to an impressive European wine-list. Paris Go, housed in an elegant Victorian building, is an endearing mix of Carlton cool blended with the flavours of France. The dining room is coated in a lively yellow with huge posters of France and a splendid mirror that gives the illusion of space while also providing a spot to gauge just how stylishly ruffled ones hair is. The high, pressed metal ceilings are painted an attractive shade of green and the tables are decked out in white linen with paper overlays to create an appealing, yet simple, space in which to enjoy the menu.
There are some nice old-fashioned touches, such as the bread stick served in a basket with curls of butter to accompany it. The menu is full of everyone's bistro favourites, and they are all done with class. A bowl of Tasmanian mussels steamed with Champagne arrives brimming with plump little bivalves floating in a sauce that's full of buttery flavours enhanced by wine and herbs. The cassoulet on a cold night is heaven sent – the warmth of the white beans, tender lamb and pork sausage casserole from the south-west of France is certain to put colour back in your cheeks. Steak with frites and salad is another crowd-pleaser, particularly for those who like a steak of reasonable size. Desserts include the usual bistro offerings (creme brulee, apple tart, profiteroles and chocolate mousse) and you should try to save room for at least a taste of a sweet treat. The wine list is not large, but it is well chosen and reasonably priced. It is divided between French and Australian drops and there are some very good examples of Burgundy worth savouring.
