The Italian word for shade or shadow - Ombra is the latest venture from celebrity chef Guy Grossi. Formerly Nudel Bar, Grossi has transformed the space next door to the CELLAR BAR into a spruced-up Salumi bar with also antipasto and select traditional pizza, pastry and bread all baked in house. The 60-seater is located next door to Guy's restaurant Grossi Florentino in the Bourke Street complex. Ombra is based on the ideals of preservation and enjoyment. Inspired by the ‘Salumerie’ of Italy Ombra focuses on delivering highest quality cured meats. This preservation refers to the produce as well as the preservation of lifestyle and culture. This makes the most of nature’s abundance by using techniques that for centuries have prolonged nature’s bounty through processes like drying, smoking, salting, fermenting, pickling and candying.
