Maedaya Maedaya, 400 Bridge Rd, Richmond VIC 3121, Australia

Taking its name from owner Toshi Maeda, Maedaya translated means "house of Maeda" and it is in this house that Toshi is able to showcase his many, many talents. On the ground floor you'll find a sake bar with more than 60 varieties of sake on the drinks list and izakaya (Japanese snack bar) food offerings including yakitori grill skewers.

Upstairs is the yakiniku (an authentic Japanese-style table charcoal grill) where you can grill, or barbecue, your own food.

Chef Koichi Nakamoto excels in the kitchen making Japanese tapas-style dishes which are a fantastic way to sample a variety of different tastes and keep the prices down. Expect options such as deep-fried cheese gyoza in a soy-based broth, or pan-fried sliced beef and vegetables in a spicy miso soup. Upstairs, sample the kalibi wonders of tender beef (which you can cook to your liking) marinated in one of Maedaya's original sauces. There's also a selection of sides such as salted steamed green soybeans or pan-fried vegetarian dumplings, which are cooked in the downstairs kitchen, to complement your meal. These are best washed down with a glass (or two) of sake.
